The Best Banana Pudding!

As I said here I made banana pudding this weekend! It was SO good, Chris and I are still snacking on it even after people went back for seconds, and thirds. I altered this recipe just a bit and here it is!



Ingredients

2 bags Pepperidge Farm Chessmen cookies (or three if you want a consistent top layer design!)
6 to 8 bananas, sliced
2 cups milk
1 (5-ounce) box instant vanilla pudding
1 (8-ounce) package cream cheese, softened
1 (14-ounce) can sweetened condensed milk
1 (16-ounce) container heavy whipping cream
1.5 tablespoons powdered sugar
2 tsp vanilla extract

Directions

Line the bottom of a 13 by 9 by 2-inch dish with 1 bag of cookies and layer bananas on top.

In a bowl, combine the milk and pudding mix and blend well using a handheld electric mixer. Using another bowl, combine the cream cheese and condensed milk together and mix until smooth. In yet another bowl mix the whipping cream, powdered sugar and vanilla until stiff peaks form. Fold the whipped topping into the cream cheese mixture. Add the cream cheese mixture to the pudding mixture and stir until well blended. Pour the mixture over the cookies and bananas and cover with the remaining cookies. Refrigerate until ready to serve.

I think this gets better with time so it would be a great make ahead dessert or if you like your cookies crispy make it right before you head out the door!

Weekend Update

This weekend was a doozy! I did some girls' hair as I mentioned here for their formal. Then Chris and I chaperoned the formal at the Fearrington Inn. It was really beautiful and we had fun while also trying our best to keep everyone well behaved and of course eating the delicious food! Seriously, if you're in the area make a trip out there because The Granery is awesome! As I'm sure the other places are delicious too!


We ended up watching the Duke v Utah Game on Chris' phone in the car afterwards! After that we were so exhausted we went straight to bed! 


On Saturday it was so cold that it was mostly an indoor day. We went over to see our place and put in some more paperwork. Then Chris got to work on studying for his boards and I got to work cleaning out my closet. I now have a big trash bag of stuff for my mom and sister to sift through before I donate it. 


It kind of felt like Saturday didn't even happen for us it was just that kind of day! On Sunday it was still pretty cold but it was our friend Hugh's birthday so I made Banana Pudding - probably the most North Carolina thing to bring to a BBQ. Most people there had never had it! (Most of them were in Chris' program too and all from out of state.)  Luckily they all loved it! And luckily they let us watch Duke beat Gonzaga! 


Also! Hugh makes a tumblr that has turned into several books and we were talking about it and I said it would be hard to put in contacts and he drew one right on the spot! Pretty cool right?

Anyway we stayed way too late for a Sunday and went to bed way too late and I'm ready for my nap!

Five on Friday!

Finally Friday! I have several plans tonight and hopefully this rainy weather doesn't ruin them!

1. I have such a weird fashion life. I go back and forth between extremes. With that said I am so excited for the Lilly Pulizer for Target! I'm probably most excited about the home stuff. I mean how cute are these napkins, that umbrella, the beach chair, I mean come on, how cute!!??

2. I have been obsessed with watching Repeat After Me. Specifically the Usher one, OMG so good!


3. Have you guys tried the birthday cake frappuccino from Starbucks? I don't usually get those kinds of drinks but limited time only...I think I'll make a special trip this weekend!

4. I know I already said we signed our papers but man, I'm ready to swim in the salt water pool at our new place! 


5. I'm spending some QT with my Chi O girls by doing their hair for formal and I'm so excited! I love doing stuff like this and the added bonus of hours of gab time!

Signed, Sealed, Delivered

Yesterday we signed the papers for our place next year! Dr. Chris and I are so excited to be living in such a cute community next year. We might have had a little dance party for several hours. We talked it over a lot, and talked to our friends who might be more excited than we are, hopefully that means we'll have some helping hands come move in day. ;)


This is what the places look like, this one isn't ours but they are all pretty similar. We are so excited! New appliances, more space, a dog park, we do have to buy our own washer and dryer but at least we'll have one that we don't have to run twice! I'm ready to start packing now!

We will miss our sweet neighbors and pop-ins from our friends that live close by but hopefully they will just want to come over more since this place is about 1,000x better than our current tree house, mushroom house, camp cabin...we could go on and on with what people call Finley!

Book Club: Yes Please by Amy Poehler

Huge disclaimer here. I am a big Amy Poehler fan. I mean, SNL, Baby Mama, Mean Girls, Parks and Rec, Smart Girls, I love it all!

With that being said, I loved this book. Amy is so real and heartwarming it was awesome to see her childhood through her eyes and how she came to be the person she is. There were some pitfalls but she had a pretty picturesque childhood going into adulthood. I loved the chapters from Seth Myers and Mike Schur. She gives little bits of advise through out like Smart Girls which I love. It's like reading the diary of your cool young aunt or your wise big sister but you're allowed to read it.

She gives you behind the scenes glimpses of SNL, Parks, motherhood, and Tina. I honestly don't know if I would like this book if I wasn't a Poehler junkie. I also think she wrote this book during a very hard time in her life, two big moments are ending, Parks and her marriage to Arnett. I'm sure that had a huge impact on how she wrote what she did and what she chose to put in and leave out. As a fan I still love her and will watch Welcome to Sweden and waited with baited breath for Sisters.

Moving On

Guys, moving is hard! But fun. I'm moving desks at work too! I used to move all the time at my old job, physically, and desk wise, I was quite the nomad, working out of which ever office I could get to. I still sometimes miss it, even the 2+ hour commute! I knew those bus/metro/train schedules like the back of my hand!

It's hard to compare cities, especially when it comes to real estate. Our old place in Baltimore was great but it was really expensive. But it was so cute and well maintained even at 100+ years old! I looked at an ancient Maryland census and found that our house was built in 1900. Our place now was built in 1984 and lived in by many many college students, and it shows - I don't think anything has been updated since then.

Looking for places here has had it's ups and downs. There are some really nice places around but the prices are ridiculous. I think they do that to deter the undergrads. We think we have landed on where we want to go but it is so hard weighing the pros and cons of each area. In a way I wish we could stay where we are because it bodes well for entertaining as much as we love to already. Hopefully wherever we go we will have plenty of visitors! 

We looked at this place, it was definitely my favorite. I legit think it would be so cool to live here but it's too far from a bus stop for us and too far to walk but I think it would be so cool and such an adventure!

It's like a mini Epcot! So tell me, do you live in Chapel Hill? Did you before? Where? Why did you like it? Should we move to the dodecahedron? Let me know!

Week Update

It was quite a busy week for Chris and I! The night Chris and I drove to Charlotte we also drove to work because the buses had stopped running due to ice. (There was no ice.) So we also had to drive the three miles home, which took us one HOUR! We found out during this trip my sweet Granny in Texas had a heart attack the night before and my dad was going to rush to Texas the next morning and wouldn't come back until Wednesday. We finally made it to Charlotte several hours later than we hoped but we made it.

Chris was volunteering at a MOM clinic the next day in Salisbury and dad went to the airport. Our house was up and about at 5am! I went running several times and realized my running route was about a mile shorter than I initially thought! I thought it was about a 5K for YEARS! Oh well, I'll make up those miles some day.

We also went out probably more than I have been out ever. Honestly, this write up is more for my memory and possibly food recommendations in Charlotte than anything else. If that doesn't interest you I'll see you tomorrow!

While Chris was at his clinic my mom made me breakfast then we headed out to find her some dress options for her trip to Atlanta. We found her several really flattering dresses after looking for several hours and her trying on at least 50 dresses. Then we met up with Chris later at Thai Orchid. I love this place and I stuffed myself to the brim with delicious food and our favorite dessert, mango and sweet rice. Chris and I ran around trying to find a place to watch the UNC v Duke game and finally settled at Hickory Tavern. What a great game to watch, I was sad we didn't get to watch it at ESPN with Heather Lee, but I was happy Duke won!

On Sunday I met up with Heather Lee and our friend Dana from Lake Braddock at Tupelo Honey which was awesome, if you can get in I HIGHLY recommend. We ate with some of her friends from ESPN and I ran into a couple friends from college too! Seriously, I'm not a big biscuit fan but theirs was seriously awesome! I met up with my mom at the outlets for more dress shopping. I found a present for Chris' mom and a couple little presents for Jackson too. It was a week of birthdays over there! We finished the night by making fish tacos for mom for being such a great hostess.
Monday I met Heather Lee and Dana at Cowfish had some great sushi then met my mom at Marshall's, found some dresses for Noelle this time and headed out to watch Jackson while his mom got her make up done by Lindsey Thorne's beauty team! Chris and I rode our boards up and down the street while Jackson was on his bike. I also 'did his make up'. Just kidding! Have you guys seen the L'Oreal make up app? It's hilarious! Then we met up with Chris' parents for dinner at Firebirds.
Tuesday I made a big breakfast for me and mom while Chris visited an office.  Leter, we met up with Heather Lee at NODA Brewing and had delicious food truck BBQ and walked over to Amelies, Heather Lee hadn't been there yet!
Wednesday was Chris' mom's Birthday and I took her out to Le Peep for brunch and talked and talked. I always forget that we have a really good time together without Chris! ;) Chris and I tried to wear Jackson out a bit and relieve his mom, we also got him his present! Then we met up for another Birthday dinner at Village Tavern, I haven't been there pretty much since we moved there 11 years ago and I forgot how good it was!

Thursday I met up with my friend Erin at Berrybrook Farms and we later found out that day she got into NC States Creative Writing Masters Program!! Which means I'll get to see her more next year!! Chris and I went on a long walk with Kona and rode our boards around the neighborhoods before treating Noelle and Jeremy and Jackson to New Zealand Cafe sushi for Jeremy's Birthday. I love how much little Jackson loves sushi, it's pretty hilarious!
On Friday we played outside some more, took Kona to the dog park and rode around with the top down, we ended the day with both sets of parents at the Gibson's and it was a blast listening to our parents talk. They are all from Texas and know a ton of the same places. I'd love to find out if there was some overlap in their times there.

We ended our week extravaganza with brunch for Jackson's 2nd birthday at Noelle's house. It was all delicious and the little boy seemed to have a great time with all of his girlfriends.
Chris and I are still detoxing from so much food we were so spoiled but we can't wait to go back home!

Book Club: Lizz Free or Die By: Lizz Winstead plus bonus!

I'm stalling again! Last week I finished Lizz Free or Die.  I wasn't sure if I would like this book since I don't have cable and therefore don't regularly watch The Daily Show, however I sometimes seek it out online, and didn't know who Lizz Winstead was. I was in for such a surprise. This book was funny, poignant, sarcastic and heartwarming all at once. I am kind of a sucker for comedy origin stories though.

This book chronicles her life before during and after The Daily Show. She writes about her life growing up and the hard road she had to take to finally get the job she never knew she wanted and was working towards. It's pretty amazing to see the people she met along the way and therefore a little insight into their stories as well.

I definitely laughed out loud which I think is a feat in writing. There was a whole chapter I just couldn't hold myself together. I can't explain it, I even forced Chris to read the chapter because it wasn't even just one part it was the whole chapter I couldn't get over!

I think this would make a fantastic beach read, very easy and funny, just the right amount of funny and sweet and a teeny tiny bit of sad, but Lizz brings you right back to funny within the sadness.

I don't think you really need to know who she is before you read it, but that might change how you feel about her. From an outside source I thought it was funny and I would definitely pass this along to a friend.

Oh man, we also listened to Dad is Fat! It was a pretty quick listen, at 5 and a half hours it got us to and to and from Charlotte with enough room for a podcast in there.  If you like Jim Gaffigan, and who doesn't? You'll like Dad is Fat! It was hilarious! I am seriously biased on this one because I love Jim Gaffigan but I laughed a ton and it was so entertaining. It's just about him and his wife and kids lives navigating New York City and his tour life with five kids. Hilarity ensues.

High Five for Friday

This was a pretty quiet week, I was able to get a lot of stuff done at work so I can fully enjoy my Spring Break!!!

1. Chris and I are going home for Spring Break! I can't wait to hug my little nephew and see how big he has gotten! 


2. I have been obsessed with looking up what the number one song was the day me and my friends were born! So random! Mine was Amanda by Boston, I'm jealous because my sisters was Don't You Want Me by The Human League. Mom, I know you're reading, yours is Little Things Mean A Lot by Kitty Kallen. If you're curious you can find out here!

3. Looking for places has been fun but also a little aggravating since we need to find a place that is available June 1 and most places that are posted now are available now, so we just have to wait! 

4. I have been going strong on my shopping ban, I don't know how well that will work when I go home! But seriously, it's a struggle. I want spring to be here so I want to help it along with some cute spring clothes!

5. I have also made a goal for myself to work out when I go home, this winter weather has made me want to go straight for comfort foods and hot chocolate a little too much! Here's to getting back in the SPRING of things! {Also, just for Spring, that one day of a high of 75 was such a tease!}

That time I saved someone from saving an owl...

I had planned a different post for today but the events of last night were just too much to not write about! 

I had a meeting near The Streets at Southpoint last night and as I was wrapping up I realized I had 2 missed calls from Chris and a text saying to call him, it was important. Well my sister in law was stuck in the mud! Of course I had the Jeep so I hurried home! I actually passed her on the way to pick up Chris but there was too much traffic to stop. 


What happened was she was driving home and an owl swooped out in front of her and hit her car! She stopped to call animal control to see what she should do, they told her if she could, safely drag it to the side of the road and they would pick it up. Well this is a little 2 lane road and by the time she got to it, well, you can imagine. :( She goes back to her car and tries to back out only to realized she's sinking in the newly melted snow mud! She called Chris and he called me and the wheels were in motion! Thankfully, as a young college student I asked for a car safety kit. This thing came with everything, and I think I have used everything in to except for the safety sparklers! Everyone totally made fun of me for wanting it but man it has come in handy!

So we pulled off to the side, turned on Chris' new light bar and got to work! She has a Volvo, the same one we used to have so we knew a little bit about how they work. We pulled her tow pin out and slowly, slowly inched her out of the mud! 

The interesting thing was, no one stopped to help her until we had her almost all the way out! I always thought people would stop to help but on a 2 lane road like the one we were one it would 1. Be scary for her to believe in the kindness of strangers and 2. Possibly scary for other to want to give help! She was on her way! It was like Christmas for Chris to get to use his light bar, use the tow pin, use the tow rope, and just get to be manly in general. It was actually kind of fun!

Silver shoes silver shoes...

So yesterday I heard from my future bride to be she wants her bridesmaids to wear silver shoes with our dresses so naturally I went right to work looking for some sweet silver slips! Noelle was in a wedding a few years ago where she was asked to wear silver shoes too so I'll most likely borrow hers, which are still for sale and in this list! But if those don't work out I think these would be my first choice!

Book Club: Where'd You Go, Bernadette? By Maria Semple

This was a super quick read, like if you wanted to you could probably finish it in about four hours. I liked the start of this book however it started to get a little boring and frankly just too unbelievable. I know this isn't supposed to be a true story but there were just too many things for me to just turn the cheek on.

This book is about Bernadette and her husband, Elgin and daughter, Bee who are living in Seattle. Elgin is a Microsoft guru and Bee is head of her

class, quickly surpassing those in her grade. Bee plans a trip to Antarctica as a reward for her perfect report card. This comes as a problem as Bernadette who was once a promising architect is now a recluse who has all of her needs fulfilled by Manjula, her personal assistant in India. It comes as no surprise that Bernadette mysteriously disappears and it's up to Bee to find her.

The whole first 2/3 of this book are correspondence between an whole number of people, neighbors, assistants, personal assistance, and just notes passed. Bee needs to put all of this together to figure out where her mother has gone. It was mostly funny but also mostly ridiculous. As another reviewer wrote, "Cry me a river, Bernadette"! Bernadette is supposed to be a brilliant architect, yet she only built 2 houses, ever! How do you get a MacArther Grant out of that? As far as I could tell she wasn't serving any charitable cause. Juuuuust saying. She clearly had some kind of mental breakdown and her husband did nothing to help her! If this was supposed to be a light read I would have wanted it to be funnier, then obviously the ridiculousness would be just that.

I can't in good conscience recommend this book. Maybe my reading style is too type A but this story just got away from me and probably got a little bit away from itself. However I would LOVE to hear from people that liked it, maybe you can convince me to like it too! :)

Weekend Update

This weekend was super low key but also awesome. On Friday Chris and I had one of his co-residents over and we all watched The Lego Movie which was adorable. The boys wouldn't stop talking about it and singing Everything is Awesome for the rest of the weekend.


Chris went to Cars and Coffee on Saturday morning and we made a great breakfast when he got back. Seriously, Costco has an amazing think cut bacon that has been rocking our world. That night we went to the Duke Syracuse game and had a blast. Then we went straight to Carrboro to meet some friends at Glass Half Full and split a bottle of Talley wine, a vineyard Chris and I visited last spring break in California. Of course we shut it down because they close at ten so we went next door to Steel String Brewery which closes at midnight. This pretty much cemented that we can't live in Carrboro but that won't stop us from going to Beerfest on March 29th! 


Thank goodness Duke has stepped up their defense! I got so frustrated watching there first games! 

On Sunday Chris and I looked for more places to live and generally took it easy, and made a bunch of fires since we don't want to move our firewood!
